EARL Les Noisettes (a limited liability farm) has its own poultry abattoir and processing facility, allowing Nicolas to retain control of this aspect of his work. He prepares delicious terrines, chicken grills and marinades, and chicken in aspic. But he also sells fresh whole chickens and chicken portions.
