It tells of his passion for foraging and harvesting the fresh ingredients he discovers on his long mountain hikes in spring, summer and autumn. Plant based foods take centre stage at Le Montgomerie. The chef may add a touch of meat and fish here and there, but they are the supporting act, used to bring the main ingredients together – an aromatic, or perhaps even a condiment. Pieter’s cuisine is grounded in seasonality, using the best preserving and processing techniques history and experience can offer and applying his skill to design a menu of impeccable dishes. Pieter’s vision is to create traditional cuisine with a modern twist.
