Dairy cooperative Monts et Vallées de savoie
Avressieux
In this cooperative you will find the place where the Raclette of Savoy (IGP) and the mountain tomme cheese are truly made.
The Raclette was invented by shepherds during the Middle Ages. At the time, it was called "roasted cheese" because it referred to the dish in which a half round of cheese was melted in front of a chimney fire. It is only later that the name "raclette" appeared, this time referring to the action of scraping the top of the melted cheese to put it on the potatoes in the plate. It is a round cheese with a dark orange and smooth rind and it has an unforgettable strong and fragrant taste.
